Cheese & Spinach Quesadillas

Shopping & Ingredients List:
4 Tortillas
250g Frozen Spinach
75g Feta, crumbled
1 tbsp Mascarpone
15g Parmesan, grated
1 tsp Paprika

Method
1. Drained & chop the spinach. Beat together with cheeses. Sandwich the flour tortillas.
2. Using a hot griddle, hot grill or bbq cook for 1-2 mins each side until slightly charred & crisp. Serve with green salad.
