Shopping & Ingredients List: 4 large Courgettes, spiralised* 400g chopped Tin Tomatoes 1 tbsp Olive Oil 2 Garlic Cloves, crushed ½ tsp Chilli Flakes 28g Basil, torn 450g frozen & peeled Jumbo Prawns 1 Lemon, zest & juice *if you do not have spiraliser, user vegetable peeler to make thin ribbons Method 1. Put olive oil & garlic in non-stick frying pan & heat for 2 mins. Tip in tomatoes & most of the basil, the prawns, chilli flakes, half the lemon zest & juice. Simmer for 5 mins. 2. Meanwhile cook the courgettes for 5 mins in the microwave & drain. 3. Toss the courgettes with the remaining lemon juice. 4. Serve courgettes topped with prawns & remaining basil scattered over.]]>
